Once upon a pastry kitchen
Ten years ago, we found ourselves working together at The Publican in the pastry kitchen. Between baking cookies and plating desserts, we were sneaking little gem lettuces and shabazi ranch dressing in the walk in.
Over the next decade, many a salad was shared. After making enough salads we began to discuss salad as canon, those salads you can immediately taste when named. When are new salads introduced into this canon, and if we make enough salads will a new classic be born?
We are set to find out, and are inviting you along on our journey. Are we here for salad fame and glory? No way.
